For a simple interview - fairly few cuts, effects, grading - then the bottleneck will be your CPU. Regarding performance: Depending on color grading / effects / and your style of editing (leveraging lots cuts or not) I think your CPU / video card will be the bottleneck before the hard drive. So, if you are not color grading, I would just convert it to 8 bit if that is what your video editor can handle. In fact, it can look worse, especially if you have noise from high ISOs - because at 150 mbps, the camera needs to store all that extra noise AND the 10 bit color, which increases the compression ratio. My understanding and limited experience is that 10 bit footage basically wont look any different from 8 bit footage if you are not color grading.
